Ahh, veggies and pasta: typically a winning combination, until you bring in the child who won’t eat anything! In my constant quest for picky Tot pleasers, I bring you recipes designed with the finickiest eaters in mind. Some were successful, some not-so-much — but they all lend themselves to variations, to help please even your picky Tot. 🙂
My son (17 months) hasn’t been crazy about noodles, so I haven’t pushed them too much lately. Unlike with his sister, I can’t throw in some frozen veggies when I boil noodles, and toss with sauce… So, I tried to get creative the other day. Here’s what I came up with:
Picky Tot Pleaser: Veggies and Pasta
- noodles of choice (I used macaroni elbows, for ease of grip for tiny hands)
- Frozen carrot coins
- A little pat of butter
- Pepper (to taste)
- Parmesan (also to taste)
Boil the carrots for about five minutes, then add noodles to cook as well , for an additional seven to ten minutes. Drain, but do NOT RINSE. In a bowl, toss with butter until melted, then toss with pepper and Parmesan.
This lends itself to multiple variations, of course! Boil with mixed veggies (peas, carrots, corn, etc), toss with a tomato pasta sauce, substitute shredded cheese for the Parmesan for a different texture, boil finely chopped or grated garlic for last few minutes, — what variations would YOU make?
