Veggie-Enriched Waffles

I was recently twice-blessed: first, with a sweet Hamilton Beach waffle maker my husband won.  Second, with a nice haul of Happy Family brand pouches from the recent Type-A Parent conference I was also blessed to attend.  (Ok, so thrice blessed, y’all!)

Since I got the waffle maker, I’ve tried to make waffles every Sunday morning for the kiddos.  I’m loving it: waffles are WAY easier to make than a batch of pancakes, even spinach pancakes!

So this Sunday, I set out to do it all over again, but wanted to add a little extra something to the mix.  Literally.

Here’s what I did to make veggie enriched waffles:

I followed the regular Bisquick box recipe for waffles, but where I typically substitute apple sauce for vegetable oil, this time, I used Happy Tot apple, peach, pumpkin, and cinnamon.  I made the veggie enriched waffles in the waffle maker, just like I usually do.  Since I didn’t use everything in the pouch, I drizzled the leftovers on to the waffles before serving them.  (see top pic for that one)

And I would’ve loved to tell you how they tasted, but my kids devoured them before I got a chance to try them!  (This picture above is from the following day, with a smudge of strawberry cream cheese.)  So, let’s just assume they were spectacular, mkay?

  1. That is GENIUS!!! I have to find some kind of way to sneak veggies into my 3 year old. Bread and milk is not going to cut it.

    • I’ve been forced to get creative, as my oldest won’t eat anything that even rhymes with green! 🙂
