I have made quite a few mini homemade pizzas over the years with my daughter, most with mixed results at best.  In the past, we’ve used tortillas or a few layers of a flaky biscuit, and I’d sneak in some sort of veggie -either in pureed form, or very finely chopped.

But this week, I tried something a little different.  I’d bought a package of pita bread (on clearance, of course), and had ONE left.  My kids  apparently are big fans of the pita bread.  Sometimes I’ll make pita PBJs, or toast a little turkey and cheese inside one.  Or just slap some honey butter on it, and they’ll go to town.

So, I thought I’d give it a whirl turning it in to pizza.  Wow!  Was I surprised!  Here’s what we did, and why I think one secret ingredient helped make them super-relish!  Best of all, it’s such a simply process, my 4 1/2 year old daughter was able to create her own, with minimal assistance. Healthy Organic Kid-Friendly “Fast Food” for Pennies

Healthy Fast Food

It’s possible to feed your children healthy organic fast food that has no hormones, no steroids, no pesticides and no refined sugar for just 61¢ per meal.  Yes, you read that right, less than one dollar a meal.

Put your preconceived notions to the side.  I have only 3 disclaimers:

  1. Your meal size should depend on how much your child eats.  My child is 2 years old.  It generally takes him two sittings to finish one of my meals, but if he’s in a growth spurt he wolfs it down in one.
  2. How many vegetables you need depend on the size of your vegetable.
  3. You know your kids allergies.  Don’t use an ingredient if your kid’s allergic to it. (Okay, I know you know that… just saying).

Just try this plan once, you’ll be delighted.

{Picky Tot Pleasers} Veggies and Pasta: Bulk Up A Classic

Ahh, veggies and pasta: typically a winning combination, until you bring in the child who won’t eat anything!  In my constant quest for picky Tot pleasers, I bring you recipes designed with the finickiest eaters in mind.  Some were successful, some not-so-much — but they all lend themselves to variations, to help please even your picky Tot.  🙂

My son (17 months) hasn’t been crazy about noodles, so I haven’t pushed them too much lately. Unlike with his sister, I can’t throw in some frozen veggies when I boil noodles, and toss with sauce… So, I tried to get creative the other day. Here’s what I came up with:

Picky Tot Pleaser: Veggies and Pasta

I used:

  • noodles of choice (I used macaroni elbows, for ease of grip for tiny hands)
  • Frozen carrot coins
  • A little pat of butter
  • Pepper (to taste)
  • Parmesan (also to taste)

Boil the carrots for about five minutes, then add noodles to cook as well , for an additional seven to ten minutes. Drain, but do NOT RINSE. In a bowl, toss with butter until melted, then toss with pepper and Parmesan.

This lends itself to multiple variations, of course! Boil with mixed veggies (peas, carrots, corn, etc), toss with a tomato pasta sauce, substitute shredded cheese for the Parmesan for a different texture, boil finely chopped or grated garlic for last few minutes, — what variations would YOU make?

My son’s verdict? He gobbled up the carrots, and threw he noodles on the floor. And then asked for more. *sigh*  Check out more recipes here.
