Ranch-Flavored Broccoli Cheddar Bites

Rumor has it, with football season winding down, there’s going to be some sort of BIG sendoff for that final game. Something super, I’m told. 😉

Last year, I shared with you my game day better-for-you baked ranch quesadillas – which are still one of my favorite quick meal ideas to whip up, particularly for my picky tots.  So this year, when the folks at Naturally Fresh® asked to team up for another game day creation, I wanted to try to kick up the healthy factor a little more.  Initially, I set out to create a ranch-flavored broccoli cheese quinoa creation, but it didn’t turn out as I expected.  So back to the drawing board.

I knew I wanted something with veggies, so a broccoli cheese appetizer sounded like a good idea.  Thankfully, these easy broccoli cheese bites sort of created themself.  So eventually, I created ranch-flavored broccoli cheddar bites!

But first I had to tweek it and make it my own, which involved a few trials and errors.  I blame it on making a Facebook declaration of my intentions.  I digress.  The final product turned out great, and was actually super quick and easy to make.  Oh, and quite tasty!

But best of all, I was able to make something delicious, and feel good about what’s in it.  The key ingredient?  Naturally Fresh® Ranch dressing.  You see, what makes Naturally Fresh stand out from other store-bought ranch dressings is there are no artificial flavors, colors or preservatives – so I feel good about giving it to my family, AND you can really taste the difference!

Ranch-flavored Broccoli Cheddar Bites

  • 2 1/4 c biscuit/pancake mix (like Bisquick)
  • 1/3 c milk
  • 1/3 c + ~2 tbs Naturally Fresh® ranch dressing
  • 1 1/4 c broccoli florets*, very finely diced
  • 3/4 c finely diced onion
  • 1/2 c + 1/4 c melted butter
  • garlic powder to taste
  • salt & pepper, to taste (I used about 4 shakes of pepper, and 3 shakes of salt.)
  • 1 1/2 c + ~1/4 c shredded cheddar cheese

Preheat oven to 425º.  Mix the biscuit mix, milk, 1/3 c ranch, 1/4 c melted butter, garlic powder, and salt and pepper until it becomes dough-like.  Fold in broccoli, onion, and cheddar.  Scoop in to mini muffin pans, about 1/3 to 1/2 filled.  Sprinkle cheese on top.  Bake for 12-15 min. While baking, melt additional butter and ranch, brush on top immediately when they come out of the oven.  Oooh, ahh, and enjoy!

* I used a bag of frozen broccoli florets, and just set them out for a few hours to thaw, without the fear of over-cooking them.  Fresh broc would work just as well.  Also, I diced mine up using the Vitamix because …well, y’all know I love my thrifted Vitamix!

    Naturally Fresh is one of our favorite dressings to pick up esp the ranch. We use it on LOTS of things in our home.

  4. I know my kiddos would love these! I’m lucky enough that they actually love broccoli and to add it to cheese and make it bite-size is perfect. A little added ranch flavor would be a huge hit at my house!

    Ginger!! I’m addicted to it. I dip just about everything in it- cheese, pepperoni, etc. Add a little Sriracha sauce to it and it’s out of this world!
